I don’t even know that it’s fair to call this a “recipe” but everyone is asking “how do you make that?!” on SnapChat so I had to share! Here’s the super easy “how to” for healthy pepper nachos you can make for cinco de mayo or any day!
- Sweet mini peppers (preferably organic)
- Guacamole (store bought it make lazy man’s guac)
- Salsa (store bought or make your own)
- Beyond Beef or your favorite crumbled beef replacement
- Hot sauce
Optional add ins:
- Black beans
Warm beyond beef in a skillet on medium heat. While it’s cooking, cut the stems off of the peppers and then slice in half, creating the shape of a chip perfect for scooping! Mix some salsa into the beyond beef and if you’re adding beans or corn, add those to the skillet as well. Arrange the “chips” in a plate or bowl and add beyond beef, topping with guac, salsa, any additional toppings you’re adding, and finally, a sprinkle of hot sauce!
