JackOLantern Stuffed Peppers


2/3 cup Beyond Beef
1/4 cup shredded cheddar cheese (I used Daiya’s vegan cheddar)
1 tbsp minced garlic
2 tbsp minced onion
1/2 tsp cayenne pepper
sea salt to taste
1 orange bell pepper


Preheat oven to 400 degrees. Cook beyond beef in a frying pan on medium heat. In the meantime, cut the top off the pepper like youre cutting open a pumpkin, and remove seeds. Use a small and sharp knife to make a jack-o-lantern face on the front. When the beef is thawed, add onions, garlic, pepper you removed when making the face, and seasoning. Stir in shredded cheese. Stuff the pepper with the mixture and put the top back on. Bake for 20 minutes.

Makes 1 serving. I served with a side salad and grilled plantains.
