Meatloaf & Roasted Root Vegetables

Ingredients

Makes 1 large serving or 2 moderate servings.

Meatload

1cup Beyond Beef
1/4 cup gluten free vegan bread crumbs
1tbsp olive pil
1/4 cup unsweetened apple sauce
1 carrot- shredded
1/2 red bell pepper- diced
3tbsp diced onion

Sauce

2tbsp organic ketchup
2tbsp organic bbq sauce
1 clove garlic, crushed

Vegetables

6 fingerling potatoes
2 carrots, cut into 2″ pieces
1tbs olive oil
parsely
sea salt
cracked pepper

Methond

preheat oven to 425*. Combine potatoes & carrots in a big bowl. Drizzle with olive oil and sprinkle with seasoning. Bake at 425 for 20-25 minutes in a single layer on a baking sheet.

Warm up beyond beef in a frying pan. Combine shredded carrot, pepper, & diced onions. Remove from heat when onions are tender. Add bread crumbs and apple sauce and mix well. Spray a pan with olive oil spray and begin scooping Beyond Beef mixture into pan. Mold it with your hands while scooping, itll be a little messy.

Combine crushed garlic, ketchup, & bbq. Pour over loaf. Bake with veggies for the last 10 minutes.
