Mediterranean Plate


Vegetables of choice. I used:
3 mushrooms
1 red pepper
1/2 summer squash
1/2 zucchini
4 stalks asparagus

1/4 cup kalmata olives
2 pita breads
1/4 cup hummus
2 cloves crushed garlic
sprinkle of parsley
sprinkle of cumin
sprinkle of pepper
sprinkle of sea salt


Slice vegetables and throw them in a big bowl. Sprinkle with parsley, pepper, cumin, and garlic (fresh crushed or powder).grill on the grill or a frying pan with a tiny amount olive oil spray. To get the edges a little crispy without using an outdoor grill, I generally turn the broiler on high and let them spend a minute or two under it when theyre almost cooked.

In the meantime, heat the oven to 400* and warm up the pita bread for 5-10 minutes. Slice into triangles with a pizza cutter.

Serve veggies, olives, pita, and hummus together on a plate & enjoy!
