Quinoa & Pea Medley


1/4 cup green peas, dry
1/4 cup quinoa, dry
1/2 cup peppers, diced
1/4 cup red onion, diced
2tbsp crushed garlic
balsamic vinegar to taste
1 tbsp crushed red pepper
1/2 tbsp garlic powder
pinch of sea salt


Bring 2 cups of water to a boil and add peas. Bring down to a simmer and cook about 5 minutes. Return to a boil and add quinoa. Return to simmer and cook for 10-12 minutes. quinoa should get fluffy and almost all the water should be gone. If there is extra water, be sure to drain it. Add peppers, onions, garlic & mix well. Combine spices in a small dish and evenly distribute over the mixture. Drizzle with vinegar and mix well. Serve cold (great for meal prep, tastes great a couple days old)

this recipe has 17g of plant based protein!!!

for those doing the 21 Day Fix, since the peas have 9g of protein alone, i count them as a red (plus beans and whatnot can count as red if youre following the vegan guidelines). This recipe would be 1 yellow, 1 red, 1/3 green. Serve it on a salad and you can make it 2 greens!
