Tempeh “chicken” Salad

Ingredients

1/3 block tempeh, raw
2tbsp diced onion
1tbsp Mindful Mayo
1tbsp mustard
Greens & salad veggies

Method

Cut tempeh into cubes and crumble cubes into a bowl. Mix with onion, mayo & mustard. Put on top of a salad or bed of greens. I prefer kale because I like the crunch!
