4 stalks celery
1/2 white onion
2 cups kale
1 cup brown rice
1/4 cup quinoa
Braggs Liquid Aminos (to taste)
1/2 package extra firm tofu
dash garlic powder
2tbsp crushed red pepper
Bring 2 cups of water to a boil and add brown rice. allow to boil for about 2 minutes, add quinoa & bring down to a simmer. cut up vegetables small enough to get in a food processor. Process veggies until tiny.
Cut tofu into cubes and press firmly with a paper towel to absorb water. fry in a frying pan coated with olive oil spray. add Braggs as well as garlic powder and red pepper flakes. cook on high to medium- i prefer it well done. when tofu is slightly browned add veggies. when the kale becomes dark and you get a really great aroma its just about done.
youll know the rice is done because itll be soft & the water will be gone. mix it in with the vegetables.
in the end i add some more Bragg’s and turn the frying pan heat up pretty high. i think it tastes good when its a little “crispy” having to scrape the rice off of the bottom of the pan as you mix… although im sure it tastes fine not a little burnt too lol
